Ingredients
Scale
500g mushrooms (mix of white button and shiitake)
1 medium onion, finely chopped
2 cloves garlic, minced
50g butter
1 litre vegetable or chicken stock
200ml heavy cream
1 teaspoon dried thyme
Salt and pepper to taste
A splash of lemon juice
Instructions
Sauté the Aromatics: In a large pot, melt the butter over medium heat. Add the chopped onions and sauté until they are soft and translucent, about 5 minutes.
Add the Garlic: Toss in the minced garlic and cook for an additional minute until fragrant.
Mushroom Magic: Add the chopped mushrooms to the pot. Sauté until they release their moisture and start to caramelise, about 10 minutes.
Herb Infusion: Stir in the thyme at this stage, allowing those lovely herby notes to infuse your mushroom mix.
Pour in the Stock: Add the vegetable or chicken stock and bring to a gentle simmer.
Simmer and Blend: Let the soup simmer for about 20 minutes. Then, use an immersion blender or transfer to a regular blender and puree until smooth.
Creamy Finish: Return the blended soup to the pot and stir in the cream (or coconut milk). Heat gently until warmed through.
Serve It Up: Ladle the creamy mushroom soup into bowls and garnish with fresh thyme or chopped chives.
Notes
For added flavor, consider using fresh herbs or a splash of truffle oil before serving.
