Ingredients

Scale
  • 4–5 medium-sized Potatoes
  • 4 tablespoons Butter
  • 1 Onion
  • 2 cloves Garlic
  • 4 cups Broth
  • 1 cup Cream
  • 2 cups Cheddar Cheese
  • 4 slices Bacon

  • Salt and Pepper

Instructions

  1. Prep the ingredients: Wash and peel the potatoes, then chop them into bite-sized pieces.
  2. Sauté the aromatics: Melt butter in a pot, add onion and sauté for 5 minutes, then add minced garlic.
  3. Cook the potatoes: Add chopped potatoes, broth, salt, and pepper, bring to a boil, then simmer for 15-20 minutes.
  4. Make it creamy: Use an immersion blender to purée the soup until smooth.
  5. Stir in cream and cheese: Return soup to pot, add cream and cheese, and stir until melted.
  6. Get those toppings ready: Cook bacon, chop green onions, and prepare any additional fixings.
  7. Serve it up: Ladle soup into bowls and top with bacon, cheese, and green onions.

Notes

For a vegetarian option, replace bacon with crispy chickpeas. This soup can be frozen, but it’s best to add cream after thawing.
