  • 2 (15.25 ounce) cans southwest corn (drained)
  • 10 ounces Rotel diced tomatoes and green chilies
  • 2 cups cheddar cheese (shredded)
  • 8 green onions (diced)
  • 8 ounces cream cheese (softened)
  • 1 cup sour cream
  • 1 teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ⅓ cup cilantro (chopped)

Instructions

  1. Prep your ingredients: Start by prepping all your ingredients. Drain the cans of corn, chop the green onions and cilantro, and make sure the cream cheese is at room temperature.
  2. Mix the base: In a large mixing bowl, combine the softened cream cheese and sour cream. Mix them together until smooth.
  3. Incorporate the cheddar cheese: Gradually fold in the shredded cheddar cheese.
  4. Add the corn and Rotel: Next, gently stir in the drained southwest corn and Rotel tomatoes.
  5. Season it right: Add in the diced green onions, garlic powder, black pepper, and salt. Mix to combine.
  6. Garnish with cilantro: Fold in the chopped cilantro.
  7. Chill out: Cover the bowl with plastic wrap and let it chill in the fridge for about an hour.
  8. Serve and enjoy: Serve with chips, veggie sticks, or toasted baguette slices.

Notes

This dip can be made a day in advance. Store in an airtight container and give it a good stir before serving.
