Creamy Chicken Gnocchi Soup

A comforting classic soup that wraps you in warmth with chicken, gnocchi, and fresh vegetables.

Ingredients

Scale
  • 2 tablespoons Olive Oil
  • 1 pound Chicken Breast, skinless and boneless
  • 2 Carrots, diced
  • 2 Celery stalks, diced
  • 1 Onion, diced
  • 3 cloves Garlic, minced
  • 4 cups Low-Sodium Chicken Broth
  • 1 cup Heavy Cream
  • 16 ounces Gnocchi
  • 2 cups Spinach (or Kale)
  • 2 teaspoons Fresh Thyme, chopped
  • 2 tablespoons Fresh Parsley, chopped
  • Salt and Pepper, to taste

Instructions

  1. Sauté the chicken in a large pot with olive oil over medium heat for about 5-7 minutes until golden. Remove and set aside.
  2. Cook the diced onions, carrots, and celery in the same pot for about 5 minutes until tender. Add garlic and cook for an additional minute.
  3. Add the chicken broth to the pot, scraping up any bits stuck to the bottom. Bring to a gentle boil and simmer for 10 minutes.
  4. Shred the cooked chicken into bite-sized pieces using two forks.
  5. Cream the soup by stirring in the heavy cream and adding the shredded chicken and gnocchi. Cook for another 3-5 minutes until the gnocchi are floating.
  6. Add spinach (or kale) and thyme, cooking until spinach is wilted. Stir in parsley before serving.
  7. Season with salt and pepper to taste.
  8. Serve hot in bowls, topped with fresh herbs and Parmesan if desired.

Notes

For a lighter version, use half-and-half or a non-dairy alternative for the cream. This soup is also freezer-friendly; just reheat gently after thawing.
