A delightful twist on a classic favorite, this Brown Butter Ice Cream combines the nutty richness of brown butter with a creamy texture for a creamy summer treat.

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 2 cups heavy cream
  • 1 cup whole milk
  • 6 egg yolks
  • 2 tsp pure vanilla extract
  • 1/4 tsp salt

Instructions

  1. Brown the butter by melting it in a medium saucepan over medium heat until it turns golden brown.
  2. Whisk together the sugar and egg yolks in a mixing bowl until pale and thick.
  3. Combine the warm brown butter with the egg mixture by whisking it in gradually.
  4. Cook the mixture over medium heat until it thickens and coats the back of a spoon.
  5. Cool the mixture completely at room temperature, then refrigerate for at least 4 hours.
  6. Churn the mixture in an ice cream maker according to the manufacturer’s instructions.
  7. Freeze the churned ice cream in an airtight container for at least 4 hours until firm.
