Cowboy Caviar

A vibrant, flavorful dip made with fresh veggies and hearty beans, perfect for gatherings.

Ingredients

  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup diced tomatoes
  • 1 cup diced bell pepper
  • 1/2 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1 avocado, diced
  • 1/4 cup Italian dressing
  • Salt and pepper to taste

Instructions

  1. Wash and prep all your vegetables. Dice your bell peppers, tomatoes, red onion, and cilantro.
  2. Open the cans of black beans and corn. Drain and rinse both under cold water.
  3. Combine in a large mixing bowl with black beans, corn, diced tomatoes, bell pepper, red onion, and cilantro.
  4. Pour in the Italian dressing and stir well to combine.
  5. Taste your mixture and season it with salt and pepper.
  6. Fold in the diced avocado just before serving.
  7. Cover the bowl and refrigerate for about 30 minutes.
  8. Serve in a vibrant bowl with tortilla chips or fresh veggie sticks for dipping.

Notes

Can be made ahead of time, just add avocado before serving to keep it fresh.
