  • 34 medium Sweet Potatoes, peeled and sliced thinly
  • 2 cups Smoked Gouda Cheese, shredded
  • 1/4 cup Chipotle Chile Sauce
  • 2 cups Heavy Cream
  • 3 cloves Garlic, minced
  • Salt & Pepper, to taste
  • 2 tablespoons Butter, for greasing
  • Fresh Herbs, optional (chopped chives, thyme, or parsley)

Instructions

  1. Prepare the sweet potatoes by peeling and slicing them thinly.
  2. Make the creamy sauce by melting butter in a saucepan, adding garlic, and then pouring in heavy cream and chipotle sauce.
  3. Layer the sweet potatoes and sauce in a greased baking dish along with smoked gouda cheese.
  4. Bake covered with foil at 375°F (190°C) for 40 minutes, then uncover and bake for an additional 15-20 minutes.
  5. Let the dish rest for about 10 minutes before serving.

Notes

Letting the dish rest helps the layers settle before serving. For a crispy top, broil for 1-2 minutes at the end.
