The Ultimate Chicken Salad

A heartwarming and versatile chicken salad that’s perfect for picnics, light lunches, or quick dinners.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup celery, diced
  • 1 cup bell peppers, diced
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Lettuce leaves for serving

Instructions

  1. Shred the chicken into bite-sized pieces.
  2. Dice the celery, bell peppers, cucumber, and red onion.
  3. Mix the shredded chicken, diced celery, bell peppers, cucumber, and red onion in a large mixing bowl.
  4. Add the mayonnaise and lemon juice. Sprinkle in salt and pepper to taste.
  5. Taste and adjust seasoning as desired.
  6. Chill in the fridge for at least 30 minutes.
  7. Serve on lettuce leaves or a slice of your favorite bread.
