Buffalo Chicken Fries

A delicious comfort food dish that features crispy fries topped with juicy buffalo chicken and smothered in a creamy cheese sauce.

  • 2 lbs Russet Potatoes
  • Vegetable Oil or Canola Oil
  • Salt
  • 1 tbsp Potato Starch or Cornstarch (optional)
  • 1.5 lbs Boneless, Skinless Chicken Breasts or Thighs
  • 1/2 Cup All-Purpose Flour
  • 1 tsp Paprika
  • 1 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/2 tsp Black Pepper
  • 1/2 tsp Salt
  • 1/2 Cup Buffalo Wing Sauce
  • 2 tbsp Butter
  • 4 tbsp Butter (for cheese sauce)
  • 4 tbsp All-Purpose Flour (for cheese sauce)
  • 2 Cups Milk
  • 8 oz Shredded Cheddar Cheese
  • Salt and Pepper to taste (for cheese sauce)
  • Ranch or Blue Cheese Dressing (for serving)
  • Chopped Green Onions or Chives (optional)
  • Crumbled Blue Cheese or Feta Cheese (optional)
  • Diced Tomatoes (optional)
  • Pickled Jalapeños (optional)
  • Chopped Celery (optional)

Instructions

  1. Prepare the Potatoes: Wash and cut potatoes into strips.
  2. Soak the Potatoes: Soak in cold water for 30 minutes.
  3. Preheat Your Oil: Heat oil to 350°F (175°C).
  4. Dry and Coat the Fries: Pat dry and optionally toss in potato/cornstarch.
  5. Fry the Fries: Fry in batches for 5-7 minutes until golden brown.
  6. Cook the Chicken: Dredge chicken in seasoned flour and cook in butter until golden.
  7. Toss in Buffalo Sauce: Combine chicken with buffalo sauce and melted butter.
  8. Make the Cheese Sauce: Create a roux with butter and flour, add milk and cheese until creamy.
  9. Assemble the Dish: Layer fries, buffalo chicken, cheese sauce, and toppings on a plate.

Notes

Serve hot with ranch or blue cheese dressing and celery sticks for added crunch.
