Broccoli Salad with Bacon

A comforting classic featuring broccoli, crispy bacon, and sweet dried cranberries, perfect for gatherings.

  • 1011 strips of bacon (cooked)
  • 2 heads of broccoli (about 1 and 1/2 pounds or 56 cups)
  • 1 cup dried cranberries
  • 1/3 cup sunflower seeds (roasted and salted)
  • 1 cup cheddar cheese (shredded)
  • 1/3 cup chopped red onion (or more to taste)
  • 1 & 1/4 cups Miracle Whip OR mayonnaise
  • 1 lemon (zest and juice)
  • 2 tablespoons white wine vinegar
  • 1/4 cup sugar
  • 1 & 1/4 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon dry mustard
  • 1/8 teaspoon cayenne pepper

Instructions

  1. Cook the bacon until crispy, preferably by baking at 400°F for about 20 minutes.
  2. Prep the broccoli by rinsing, trimming florets, and chopping stems into bite-sized pieces.
  3. Add the dried cranberries and sunflower seeds to the broccoli.
  4. Tackle the cheese and onions by adding shredded cheddar and chopped red onion to the bowl.
  5. Whisk together Miracle Whip, lemon zest, lemon juice, white wine vinegar, sugar, salt, pepper, dry mustard, and cayenne pepper in a separate bowl.
  6. Combine the dressing with the broccoli mixture, ensuring all ingredients are well-coated.
  7. Chill the salad in the fridge for at least one hour before serving.

Notes

This salad can be made a day ahead for best flavor. Adjust ingredient amounts to suit your taste preferences.
