Heaven on Earth Cake

A delightful dessert featuring layers of moist vanilla cake, creamy filling, and fresh mixed berries, perfect for special occasions or indulgent treats.

  • 1 box vanilla cake mix
  • 1 cup water
  • 1/3 cup vegetable oil
  • 3 large eggs
  • 1 (8 oz) package cream cheese, softened
  • 1 cup powdered sugar
  • 1 (8 oz) container whipped topping
  • 1 cup frozen mixed berries
  • Optional: Additional fruit for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the cake batter by combining the box of vanilla cake mix, water, vegetable oil, and eggs. Beat on medium speed for about 2 minutes.
  3. Bake the cake in a greased 9×13-inch baking pan for 25-30 minutes.
  4. Cool the cake in the pan for 10 minutes, then transfer it to a wire rack.
  5. Make the cream cheese filling by beating the softened cream cheese and powdered sugar until smooth.
  6. Fold in the whipped topping gently.
  7. Add the thawed, drained mixed berries to the cream cheese mixture and mix until evenly distributed.
  8. Assemble the cake by slicing it horizontally, spreading half of the cream cheese filling on the bottom layer, then add the top layer and spread the remaining filling on top.
  9. Chill the cake in the refrigerator for 2-3 hours before serving.
  10. Serve with additional fruit on top if desired.
