Tarte Salée Comté & Oignons Caramélisés

A delightful French tart that combines rich Comté cheese with sweet caramelized onions, perfect for gatherings or a comforting family dinner.

  • 4 to 5 large yellow onions, sliced
  • 30g unsalted butter
  • 1 tablespoon olive oil
  • Shortcrust pastry
  • 3 large eggs
  • 200ml full-fat cream
  • 100ml milk
  • 150g Comté cheese, grated
  • Salt and freshly ground black pepper
  • Freshly grated nutmeg

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Prepare the onions by peeling and slicing them into thin rings. In a skillet, melt the butter with olive oil over medium heat.
  3. Add the sliced onions and a pinch of salt, cooking for about 20–25 minutes until golden brown.
  4. Whisk together the eggs, cream, and milk in a bowl. Season with salt, pepper, and grated nutmeg.
  5. Roll out the pastry into a large circle and place it into a tart pan, trimming the excess and pricking the bottom with a fork.
  6. Spread the caramelized onions over the pastry, then sprinkle the grated Comté on top.
  7. Pour the custard mixture over the onions and cheese slowly.
  8. Bake in the preheated oven for 35–40 minutes, until the top is golden and the custard is set.
  9. Cool slightly before slicing to serve.

Notes

Serve with a green salad and a glass of crisp white wine for a perfect meal.
