BBQ Ranch Chicken Loaded Fries

Golden crinkle-cut fries topped with tender shredded rotisserie chicken, rich BBQ sauce, gooey Monterey Jack cheese, and zingy BBQ ranch sauce.

  • 12 oz crinkle-cut fries
  • 2 cups rotisserie chicken (shredded)
  • 1/4 cup BBQ sauce
  • 1/3 cup thinly sliced red onions
  • 1 cup shredded Monterey Jack cheese
  • 2 Tbsp sour cream
  • 1 Tbsp mayonnaise
  • 1 garlic clove (pressed)
  • 1 tsp minced dill weed
  • 1 tsp minced parsley
  • 2 1/2 Tbsp low-fat buttermilk
  • Salt and fresh cracked peppercorns (to taste)
  • 1 1/2 to 2 Tbsp BBQ sauce for the ranch

Instructions

  1. Preheat your oven according to the package instructions for the fries (usually around 425°F). Spread them on a baking sheet and pop them in the oven.
  2. Shred the rotisserie chicken while the fries are baking.
  3. Combine shredded chicken with 1/4 cup of BBQ sauce in a mixing bowl. Stir until well coated.
  4. Whisk together sour cream, mayonnaise, pressed garlic, dill weed, parsley, and buttermilk. Add salt and pepper to taste, then mix in 1 1/2 to 2 tablespoons of BBQ sauce.
  5. Take the fries out of the oven and evenly distribute the BBQ chicken mixture over them. Top with shredded Monterey Jack cheese and red onions.
  6. Return to the oven for 5 minutes to melt the cheese.
  7. Drizzle the BBQ ranch sauce generously over the top before serving.

Notes

For a killer presentation, serve the loaded fries on a large platter or in individual bowls. Sprinkle extra parsley on top and serve with additional BBQ ranch sauce on the side.
