BBQ Chicken Salad with Cilantro Dressing

A flavorful BBQ chicken salad featuring smoky chicken, fresh veggies, and a creamy cilantro dressing, perfect for summer gatherings.

  • 1 lb boneless, skinless chicken breasts or thighs
  • 1/2 cup BBQ sauce
  • 4 cups romaine or mixed greens
  • 1 can black beans, rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup cherry or grape tomatoes, halved
  • 1/2 red onion, diced
  • 1 ripe avocado, sliced
  • 1 cup tortilla chips (optional)
  • 1/2 cup plain Greek yogurt
  • 2 cloves garlic, minced
  • 2 tbsp lime juice
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1/2 cup chopped cilantro
  • Salt and black pepper, to taste

Instructions

  1. Prep the chicken: Season with salt, black pepper, and cumin. Heat grill or skillet over medium-high heat.
  2. Grill the chicken: Cook for 6-7 minutes on one side, flip and brush with BBQ sauce. Grill for another 5-6 minutes until cooked through.
  3. Make the cilantro dressing: Whisk Greek yogurt, garlic, olive oil, lime juice, cumin, cilantro, salt, and pepper in a small bowl.
  4. Prep salad ingredients: Chop lettuce, rinse black beans, and slice tomatoes, red onion, and avocado.
  5. Assemble the salad: Layer chicken over greens, add veggies, beans, corn, and avocado. Drizzle dressing and toss gently.
  6. Crunch time: Top with tortilla chips or serve on the side.

Notes

Store leftovers without dressing in an airtight container in the fridge for up to two days.
