Bananas Foster Cinnamon Rolls

Warm, fluffy cinnamon rolls infused with ripe bananas, spices, and a buttery rum sauce, perfect for brunch or a sweet treat.

  • ¼ cup Sugar
  • 2 ¼ tsp Quick Rise Yeast (¼ oz package)
  • ¾ cup Overripe Banana (mashed, about 1 ½ bananas)
  • ¼ cup Butter (melted)
  • 1 Large Egg (at room temperature)
  • 4 cups All-Purpose Flour
  • Pinch Salt
  • ½ cup Butter (softened, for filling)
  • ⅔ cup Dark Brown Sugar
  • 1 ½ tbsp Ground Cinnamon
  • ½ tsp Ground Cardamom (optional)
  • ¾ cup Half and Half (or heavy cream, for sauce)
  • 4 tbsp Butter (for sauce)
  • ¼ cup Dark Brown Sugar (for sauce)
  • 1 tsp Cinnamon (for sauce)
  • ¼ tsp Ground Cardamom (optional, for sauce)
  • 1 tsp Vanilla Extract (for sauce)
  • 12 tbsp Dark Rum (optional, for sauce)
  • ½ Banana (thinly sliced)
  • 3 tbsp Pecans (chopped, optional)
  • ½ cup Powdered Sugar (for glaze)
  • 23 tbsp Half and Half (or milk, for glaze)
  • 1 tsp Vanilla Extract (for glaze)
  • Pinch Salt (for glaze)

Instructions

  1. Activate the yeast: In a bowl, combine the warm milk and sugar, then sprinkle your yeast on top. Let it sit for about 5-10 minutes until foamy.
  2. Mix the wet ingredients: In a larger bowl, combine the mashed bananas, melted butter, and egg. Blend everything together until well combined.
  3. Combine dry ingredients: In a separate bowl, whisk together the flour and salt. Gradually add this to your banana mixture and stir until a dough starts to form.
  4. Knead the dough: On a floured surface, knead for about 5-7 minutes until smooth and elastic. Sprinkle more flour if sticky.
  5. First rise: Place in a greased bowl, cover with a towel, and let it rise until doubled in size (about 1 hour).
  6. Prepare the filling: Mix softened butter, brown sugar, cinnamon, and optional cardamom until fluffy.
  7. Roll it out: Punch down risen dough and roll into a 12×18 inch rectangle.
  8. Spread the filling: Spread filling mixture over the dough, leaving an inch on the edges.
  9. Add bananas and pecans: Top with slices of banana and pecans if using.
  10. Roll it up: Starting from the long side, roll tightly into a log and cut into 12 rolls.
  11. Second rise: Arrange in a greased baking dish, cover, and let rise for about 30 minutes.
  12. Preheat the oven: Heat to 350°F (175°C).
  13. Bake: Bake for 25-30 minutes or until golden brown.
  14. Make the sauce: Combine sauce ingredients in a saucepan over medium heat until melted and combined.
  15. Glaze it up: Drizzle the sauce over warm rolls.
  16. Prepare the glaze: Mix powdered sugar, vanilla, and half and half until smooth and drizzle over rolls before serving.
  17. Serve immediately and enjoy!

Notes

Best enjoyed fresh from the oven; can be stored in an airtight container for 1-2 days or frozen before second rise.
