Baked Feta Eggs

A warm and cozy breakfast delight, combining creamy feta, baked eggs, and sweet cherry tomatoes.

Ingredients

  • 200g feta cheese
  • 4 large eggs
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (like dill or parsley) for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare a small baking dish or oven-proof skillet and drizzle 2 tablespoons of olive oil on the bottom.
  3. Add the block of feta in the center of the dish, surrounding it with cherry tomatoes.
  4. Season generously with sea salt and freshly cracked pepper.
  5. Bake for 15-20 minutes, until the feta starts to get golden and the tomatoes blister.
  6. Add the eggs gently over the feta and tomatoes.
  7. Return to the oven for another 10-12 minutes, until the egg whites are set but yolks are still runny.
  8. Garnish with fresh herbs and serve warm with crusty bread.
