Bacon Onion Tomato Pie

A comforting and nostalgic pie filled with crispy bacon, caramelized onions, juicy tomatoes, and melty cheese, all wrapped in a flaky pie crust.

  • 1 refrigerated pie crust (9-inch)
  • 6 strips bacon (cooked and crumbled)
  • 1 large sweet onion (thinly sliced)
  • 3 medium ripe tomatoes (sliced; about 2 cups)
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ½ cup mayonnaise
  • 2 tablespoons chopped fresh basil (or 1 teaspoon dried)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the pie crust by laying it in your 9-inch pie pan, pressing gently, and trimming the edges.
  3. Cook the bacon in a skillet over medium heat until crispy, then crumble it.
  4. Sauté the sliced onions in the bacon fat until soft and golden, about 10 minutes.
  5. Arrange the sliced tomatoes on paper towels to drain excess moisture.
  6. Mix the crumbled bacon, sautéed onions, tomatoes, cheddar, mozzarella, mayonnaise, basil, salt, and black pepper in a large bowl.
  7. Fill the prepared pie crust with the mixture.
  8. Bake in the preheated oven for about 30-35 minutes, or until the top is bubbly and golden.
  9. Let it cool for about 10 minutes before serving.

Notes

For added flavor, let the pie cool slightly to set the filling. Pair it with a salad or serve on a rustic board with cheeses.
