Avalanche Cookies

No-bake Avalanche Cookies are a nostalgic treat combining crunchy Rice Krispies, gooey marshmallows, and creamy peanut butter for a delightful experience.

  • 2 cups Rice Krispies
  • 1 cup peanut butter
  • 1 cup white chocolate chips
  • 1 cup mini marshmallows
  • 1/2 cup chocolate chips
  • 1/4 cup powdered sugar

Instructions

  1. Prep your workspace by clearing a space and lining a 9×13 baking pan with parchment paper.
  2. Melt the peanut butter and white chocolate chips in a large microwave-safe bowl, microwaving 30 seconds at a time until smooth.
  3. Mix in the mini marshmallows, stirring to coat them in the mixture.
  4. Fold in the Rice Krispies gently to combine without crushing them.
  5. Add the chocolate chips and fold gently to incorporate.
  6. Transfer the mixture into the pan and press down evenly using damp hands.
  7. Chill in the refrigerator for at least 2 hours until firm.
  8. Cut into squares and serve.

Notes

For a nut-free option, substitute peanut butter with sunflower seed butter. You can also customize with nuts, coconut, or crushed Oreos.
