Asparagus Puff Pastry Bundles

These delightful Asparagus Puff Pastry Bundles feature tender asparagus wrapped in golden puff pastry, Gruyere cheese, and prosciutto, making them a perfect spring appetizer.

  • 1 bunch asparagus (about 1216 ounces, ends trimmed)
  • 1 tablespoon extra virgin olive oil
  • Kosher salt to taste
  • Pepper to taste
  • 2 sheets frozen puff pastry (thawed)
  • 8 ounces Gruyere (shredded)
  • 12 slices prosciutto
  • 1 egg (beaten)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse the asparagus under cold water and trim the ends. Pat dry, then toss with olive oil, kosher salt, and pepper.
  3. Roll out the thawed sheets of puff pastry to about ⅛-inch thick.
  4. Cut each pastry sheet into 6 squares (about 4×4 inches).
  5. Place a slice of prosciutto on each square followed by a sprinkle of Gruyere and 2-3 asparagus spears.
  6. Fold the edges of the pastry over the filling and press to seal.
  7. Brush the tops with the beaten egg.
  8. Bake for 20-25 minutes, or until golden brown and puffed up.
  9. Allow to cool slightly before serving.

Notes

These bundles can be prepared in advance and stored in the fridge before baking. They can also be frozen and baked from frozen.
