Apple Streusel Bread

A delightful blend of soft bread infused with apples and topped with a crunchy streusel, perfect for any time of the day.

  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream (or plain Greek yogurt)
  • 1 ½ cups peeled and diced apples (about 2 medium apples)
  • ½ cup all-purpose flour (for streusel topping)
  • ⅓ cup brown sugar (packed)
  • 1 teaspoon ground cinnamon (for streusel topping)
  • 3 tablespoons unsalted butter (cold and cubed, for streusel topping)
  • ½ cup powdered sugar (for glaze, optional)
  • 12 tablespoons milk (or cream, for glaze)
  • ¼ teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat the oven: Start by preheating your oven to 350°F (175°C).
  2. Prepare the baking pan: Grease a 9×5-inch loaf pan with butter or cooking spray, or line it with parchment paper.
  3. Mix the dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. Cream the butter and sugar: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy (about 3-5 minutes).
  5. Add the eggs and vanilla: Beat in the eggs, one at a time, and then stir in the vanilla extract.
  6. Combine wet and dry ingredients: Add the dry ingredients to the butter mixture, alternating with the sour cream. Mix until just combined.
  7. Fold in the apples: Gently fold in the diced apples using a spatula.
  8. Prepare the streusel topping: In a small bowl, combine the flour, brown sugar, and cinnamon. Add the cold cubed butter and mix until crumbly.
  9. Assemble the bread: Pour the batter into the prepared loaf pan and sprinkle the streusel topping over it.
  10. Bake: Bake for 55-65 minutes, or until a toothpick inserted comes out clean.
  11. Cool and glaze (optional): Allow it to cool for 10 minutes, then transfer to a wire rack. If desired, mix together the glaze ingredients and drizzle over the cooled bread.

Notes

Feel free to experiment with different types of apples or even add nuts for extra crunch.
