Crisp and Crunchy Apple Broccoli Salad

A refreshing salad with the crispness of apples and the earthiness of broccoli in a creamy, tangy dressing.

Ingredients

  • 2 Honeycrisp apples, chopped
  • 2 cups broccoli florets
  • 1/2 cup nuts (walnuts or pecans)
  • 1/4 cup mayonnaise
  • 1/4 cup plain yogurt
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Prep the Ingredients: Wash your broccoli and cut it into small florets.
  2. Chop the Apples: Core and chop the Honeycrisp apples into small cubes.
  3. Toast the Nuts: Optionally, toast your nuts in a dry skillet for about 5 minutes.
  4. Make the Dressing: In a large bowl, combine the mayonnaise, yogurt, honey, lemon juice, salt, and pepper. Whisk until smooth.
  5. Combine It All: Add the apples and broccoli to the dressing and gently fold together.
  6. Add the Nuts: Sprinkle in the toasted nuts and toss gently.
  7. Taste and Adjust: Taste and add more seasonings if needed.
  8. Chill Before Serving: Let the salad chill in the fridge for about 30 minutes.

Notes

Serve as a side to grilled chicken or as a topping for a whole grain bowl. Drizzle extra honey for a sweet finish.
